Similar to our approach for seafood and red meat, we pride ourselves on taking the time and effort to source only the best suppliers from around Tasmania and Australia.

The Tasmanian poultry industry has a strong reputation for quality and care, both in terms of animal husbandry and for the processing of the meat.
Examples of this are air chilling and soft scalding which is a more labour intensive process but one which results in meat which doesn’t have any water penetration (which reduces flavour), or has been subjected to chlorine whilst being water chilled.

Where possible we aim to use free range animals, and we inspect the working conditions of all our suppliers.

In our opinion getting great taste means taking care of the animal throughout it’s life and processing the meat which the same amount of attention.
